Quality
A Strictly Organic Oil
The Ancillotti Oil Mill is certified for the production of Organic Oil. Organic Oil refers to the specification that encompasses agricultural production and cultivation methods that use only natural substances. The use of chemically synthesised substances such as fertilisers, herbicides and insecticides is strictly forbidden as they can cause serious alterations to the environment around us. Our Organic Oil does not contain any harmful substances but respects the earth and the health of the consumer.
IGP Toscano certification
The Frantoio is certified for the production of Tuscan PGI oil and respects its specifications. The consumer is guaranteed that the oil with the ‘Toscano PGI’ seal has been produced with Tuscan olives and is certified extra virgin following an organoleptic examination by a panel of experts.
Cold processing
The entire olive processing at the Ancillotti oil mill takes place at a low temperature (never above 27 degrees). This is essential to enhance the taste and aroma of the extra virgin oil, and above all to keep its nutritional and beneficial properties unaltered.
Zero Waste and Hazelnut Production
It is with great satisfaction that Frantoio Ancillotti, since 2016, has changed the OIL production process so that no waste is produced. The by-products resulting from oil extraction are all used for the production of CLEAN ENERGY. In particular:
➜ The mechanically extracted, dry, clean and genuine OLIVE OIL Kernel is perfect for feeding stoves and boilers for heating. Its high calorific value makes it economical and environmentally friendly.
➜ DENIED HUMID SAND that is sold to biodigestion plants for bio-methane production
This is possible because the extraction of the oil is done entirely through mechanical processes, so there is no contamination with chemicals. Certified food-grade and environmentally friendly products are also used for the daily cleaning of machinery and work surfaces.

About us
The history of today’s ‘oil mill with millstones’ began back in 1932 when Orlando Ancillotti decided to purchase a premises in the centre of Cerreto Guidi and set up the ‘Electric Mill of Orlando Ancillotti and Sons’, where he carried out his first oil campaign.
The business was then passed on to his sons Angiolino and Giovanni. In particular, it was thanks to Giovanni’s careful and passionate guidance that the mill grew in size and competence, improving every year until today.
Since 2012, the business has been in the hands of their children Stefania and Stefano, who combine the milling tradition with the most modern extraction technology.

IGP Toscano certification
The Frantoio has certification for the production of IGP-certified Tuscan oil. This is a type of certification that characterises certain lines of EVO oil produced by the mill, with carefully selected olives and a limited number of packages.
Cold processing
The entire olive processing in the Ancillotti oil mill takes place at a low temperature (never above 27 degrees). This is important to enhance the oil’s taste, aroma and above all to maintain the nutritional properties of the fruit. In addition, contact with the air is limited as much as possible in order to reduce oxidation as much as possible and avoid any kind of chemical alteration of the olive paste.
Reuse of all Processing by-products
With great satisfaction, since 2016 Frantoio Ancillotti has changed the OIL production process so that no waste is produced. In fact, the residual products from oil extraction are completely reused for energy production. In particular: from the humid pomace is extracted the Peanut suitable to be burned in stoves and biomass boilers for heating systems and, from the remaining part, DENIED HUMID PITCHED SOIL, is sent to a biodigestion plant for the production of methane gas. No chemicals are used at the mill. Even for the daily cleaning of the machinery and work surfaces, products certified for food use are used.

About us
The history of today’s ‘oil mill with grindstones’ began way back in 1932 when Orlando Ancillotti decided to purchase a premises in the centre of Cerreto Guidi and set up the ‘Electric Oil Mill of Orlando Ancillotti and Sons’, where he carried out his first oil campaign.
The business passed into the hands of his son Giovanni who, in 1960, decided to move the activity to an old building just outside the town centre, still the site of the oil mill, where he carried on the activity for over 50 years, maintaining the traditional millstone crushing.
Since 2012 the business has been in the hands of his children Stefania and Stefano, who combine the tradition of the millstones with the most modern extraction technologies.
